Vegetable substituted tuna nuggets and changes in nutrient content during frozen storage

Abstract Malnutrition in children will affect their growth, causing a decrease study skills and immunity. Considering the issues, overcoming nutritional issues of babies toddlers by giving food supplements is mandatory. Innovations making basically from fish aim to increase number nutritions such as protein, fiber, vitamins, minerals, antioxidants which contribute development body organ function. This research aimed know changes iron, beta carotene, zinc during storage. The design experimental. first stage tuna nuggets are substituted with pumpkin, broccoli, red beans. Furthermore, analysis nutrients before after storage freezer for 3 months. There was carotene levels pumpkin nuggets, broccoli tuna, bean 34.5%, 14.2%, 9.6%, respectively. an iron content much 65.2%, 7.1%, 30%, 23.6% 78.8%, 46.3%. Storage frozen conditions months causes levels.
